Blueberry Muffins are a delicious pastry, perfect for a quick breakfast or lunch. These muffins take only 15 minutes to prepare and 30 to bake. These simple household ingredient muffins are a necessary addition to available treats in one’s home, easily accessible, not difficult to follow, and of course, absolutely delicious!
Ingredients:
- ½ cup softened butter
- 1¼ cups sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 2 cups flour
- ½ teaspoon salt
- 2 teaspoons baking powder
- ½ cup milk
- 2 cups blueberries, washed
Instructions:
- Preheat the oven to 375, and prepare muffin sheets.
- Cream together the butter and sugar with an electric mixer until light and fluffy.
- Add in eggs and vanilla, mix until combined.
- Sift the flour, salt, and baking powder into a separate bowl.
- Add a small portion of the dry ingredients into the wet ingredients.
- Pour a small amount of the milk into the mixture, mix by hand or with an electric mixer.
- Repeat steps 5 and 6 until you’ve used all of the dry ingredients and milk.
- Wash the blueberries
- Fold small portions of the blueberries into the mixture.
- Fill the lined muffin sheet with your batter.
- Cook for 30 mins, let cool, and serve!
(optional: before putting in the oven, sprinkle 3 tbsp of sugar across the top of your muffins, this can create a more diverse texture to the top.)
